Papas arrugás
Papas arrugadas (arrugás) is a typical dish from Canary Islands. They are potatoes that are boiled in very salty water, without peeling. Once cooked, the water is removed and the potatoes are briefly left in the pot on the stove to dry off, until they become shriveled with a fine salt crust. Then they are spiced with Mojo verde (green) or rojo (red) that are very spicy sauces based on garlic, chili pepper and some other spices. The color depends on the color of the peppers.
We prepared papas arrugás at home. Of course, it was delicious and I loved it!!! Yummy, yummy (or mniam mniam)!!
